Esta semana vamos a hacer tartaletas de limón que gustan a todo el mundo y quedan bien en cualquier cena o reunión. Además de estar riquísimas son muy vistosas así que es la mejor elección para llevar a una cena o merienda de familia o amigos.
Para hacerlas, necesitamos estos ingredientes:
Para la masa o Pâte sablée
· 250 gr de harina
· 175 gr de mantequilla
· 80 gr de azúcar
· 1 huevo
· 1 pizca de sal
Para la crema de limón
· 4 huevos
· 4 limones
· 50 gr de mantequilla
· 200 gr de azúcar
Para el merengue italiano
· 25 gr de azúcar
· 2 huevos
· 100 gr de azúcar
· ¼ de vaso de agua
(Sé que he puesto dos veces azúcar, no estoy loca. En la preparación veréis el porqué)
Además, también necesitaremos:
Para la masa o Pâte sablée
· Un bol
· Papel film
Para la crema de limón
· Thermomix
Para el merengue italiano
· Un vaso
· Un cazo
· Una cuchara de palo
· Un robot de cocina o una batidora con varillas
Ya lo tenemos todo. Vamos a empezar!!
Hay que dejar reposar la masa en el bol, tapada con un film al menos 1 hora dentro de la nevera. Yo la hago de un día para otro para que salgan mejor, aunque con una o dos horas en la nevera sería suficiente
Una vez reposada, distribuimos la masa, de manera uniforme en suelo y paredes (no demasiada masa, que no queden muy gruesas) en un molde especial para tartaletas (mejor de silicona para desmoldarlas con facilidad).
Una vez que la masa está en el molde, con un tenedor pinchamos la base de las tartaletas. Con el horno previamente precalentado las horneamos a 180º durante aproximadamente 15 minutos.
Esta crema puede hacerse en un momento con la maravillosa Thermomix, se ponen todos los ingredientes en el recipiente (huevos, el zumo de los 4 limones, la mantequilla y el azúcar) y se pone a velocidad 1 y temperatura 100ºC durante 10 minutos.
También puede hacerse al baño María: se mezcla la mantequilla y el azúcar con el zumo de limón. Se pone al baño María y se le añaden los huevos batidos (como para hacer tortilla) y se deja al fuego durante 10 minutos sin dejar de remover.
Ahora el merengue. El merengue italiano es perfecto, blanco, brillante y denso. Para hacerlo, he usado un robot de cocina Kenwood (Me encanta!). Reconozco que juego con ventaja, porque con el robot, se hace en un momento.
Se ponen las claras y los 25 gramos de azúcar en el recipiente del robot. Por otro lado, hacemos un almíbar al punto de bola con los 100 gramos de azúcar y el agua.
Se funde el agua y el azúcar para formar un almíbar lo suficientemente denso como para que parezca que se forman bolitas al sacar la cuchara y dejarlo caer. También estará listo cuando el almíbar, transparente pero casi hecho caramelo, forme hilos.
Se empiezan a batir los ingredientes del robot, cuando los ingredientes mezclados (pero no demasiado), sin dejar de batir se añade el almíbar poco a poco (en caliente) y se bate la mezcla hasta que el merengue esté denso (pero no demasiado duro). El resultado es perfecto, brilla y no se baja. (Truco: si le echas unas gotas de limón queda más blanco y bonito)
Ya tenemos todas las partes listas para empezar a montar las tartaletas.
En la bandeja del horno (fría) ponemos las tartaletas que ya se habrán enfriado. Con una cuchara pequeña, se pone un poco de crema de limón en cada una de ellas.
Por último, se añade el merengue. Yo lo hice con ayuda de una manga pastelera que me compré el otro día en IKEA (barata y práctica. La recomiendo). Si no tenemos manga pastelera, puedes usar una cuchara para poner el merengue en cada pastel o bien utilizar las bolsitas transparentes que se utilizan para guardar los bocadillos si cortas una esquinita con unas tijeras (para hacer una manga pastelera casera). Ayudándonos con una cuchara, llenamos la manga pastelera y empezamos a trabajar con ella poniendo un ‘pegote’ de merengue en cada tartaleta.
Para darle el toque final, metemos la bandeja en el horno. En la opción de gratinar y con la puerta del horno entornada se gratina un poco el merengue hasta que quede un poco tostado. OJO! Que no se os quemen!! Es un toque que se consigue en poco tiempo.

LEMON TARTLETS
This week we are going to make some lemon tartlets, everybody likes them and they match in every dinner or meeting. Besides of being incredibly tasty, they are beautiful, so they are the best option to share with family and friends.
For make them, we need these ingredients:
For the dough or Pâte sablée
· 250 gr of flour
· 175 gr of butter
· 80 gr of sugar
· 1 egg
· 1 pinch of salt
For the lemon cream
· 4 eggs
· 4 lemons
· 50 gr of butter
· 200 gr of sugar
For the Italian meringue
· 25 gr of sugar
· 2 eggs
· 100 gr of sugar
· ¼ cup of water
(I know there are two ‘sugar’, I am not crazy. In the preparation you understand why)
Besides, we need:
For the dough or Pâte sablée
· A bowl
· Film
For the lemon cream
· Thermomix
For the Italian meringue
· A glass
· A saucepan
· A Worden spoon
· A Kitchen Aid or electric beaters
Ok, ready? Go! Let’s start!!
Firstly, we are going to do the tartlet dough. We mix sugar and salt with the whole egg. Then, we add the flour with our fingers. When the mixture is grainy we add butter (previously softened). Finally, we knead the mixture until it becomes creamy and light dough.
Leave the dough in the bowl and put it on the fridge (covered with the film) for at least an hour. I usually make it the day before, but with a couple of hours should be enough.
Once it is ready, we put the dough uniformly on the bottom and walls of the baking pan (not too much, and not too thick) It's better to use a silicone baking pan for take them out easily.
When the dough is on the baking pan, we prick the tartlets with a fork. With the oven pre-heated we baked the tartlets up to 180ºC for 15 minutes.
While the baked dough is getting cold, we make the lemon cream.
You can make this cream on the great Thermomix, the only thing you have to do is to put all the ingredients on the vessel (eggs, 4 lemon juice, butter and sugar) speed 1 and 100º degrees for 10 minutes.
You can also make it on a water bath: you have to mix the butter and the sugar with the lemon juice. Put it on a water bath and add the eggs beaten (as in an omelette) and leave it on the fire for 10 minutes (you have to stir the mixture all the time)
Now let’s make the meringue. The Italian meringue is perfect, white, shiny and dense. I used a Kenwood to make it (I love it!) It’s really an advantage and you make it easy and quickly.
Put the whites with 25 gr of sugar in the vessel. On the other hand, we make syrup (heat it out to the ball point) with the other 100 gr of sugar and the water.
Melt water and sugar to make the syrup dense enough to let it form little balls when you drop it or when it makes strings.
Start beating the ingredients on the robot. When they are a little mixed add the syrup still hot and beat the meringue until is dense (but not to hard). The result is perfect, it’s shiny and don’t gets down. (HINT: if you add some lemon drops, it will become whiter)
We have all the dessert components ready to begin the tartlets.
Put the tartlets in the oven tray (cold). With a spoon, add some cream on each little cake.
Finally, we add meringue. I did it with a pastry bag I bought last week on IKEA (Cheap and easy. I recommend it) If you haven’t got one of this you can make it yourself with a sandwich plastic bag (the only thing you have to do is cut a corner) or you can use a spoon. We fill the pastry bag with a spoon and begin to work with it putting a blob on all the tartlets.
For the final touch, we put the tartlets into the oven for a few seconds, with the door open and in the grill option until they get a little brown. Don’t burn them!! Slightly. They are ready in a few minutes.
