OREO CUPCAKES




Esto si que es un flechazo en toda regla, pero no mío no… de mis amigos y el querido Mr Caos que habían decidido entre todos que les debía unos Oreo Cupcakes si o si. Así que aprovechando el cumple del uruguayo me puse manos a la obra.

Os dejo la receta y ya me diréis que os parece, pero os adelanto que son un vicio malo malo malo…






INGREDIENTES
24 muffins grandes

Muffins
390gr harina
3 cucharaditas de levadura
½ bicarbonato
140gr azúcar
3 huevos
250 yogur griego
180 aceite
1 cucharada vainilla
2 cucharadas de cacao
100gr chocolate de cobertura
6-8 cookies

Frosting
5 cookies
Azucar glass al gusto (aprox 150gr)
400gr philadelphia
300gr Nata
60gr de mantequilla

Decoración
2 cookies
24 mini cookies

Si lo que quieres es hacer unas muffins estándar, un tercio de los ingredientes te deberían bastar para un par de docenas. Las mías son King size pero que ricas!!

HERRAMIENTAS
2 Boles
Espátulas
1 cuchara grande
2 cucharas pequeñas
Una minipimer
Un triturador
Una manga pastelera
Varillas

Por un lado mezclamos los ingredientes húmedos en un bol: derretimos el chocolate de cobertura, añadimos el yogur, aceite, vainilla e incluimos los huevos de uno en uno integrándolos bien. Ahora, en un bol aparte mezclamos los secos. Acuérdate de tamizar la harina, incluir el cacao, el azúcar y por último la levadura y el bicarbonato.

Poco a poco vamos integrando los ingredientes secos en el bol de los húmedos obteniendo una mezcla homogénea en los menores movimientos posibles. Cuando la tengas lista, añade las cookies en trozos a la mezcla.

Llena los moldes de los cupcakes y colócalos en la rejilla del horno. Los coceremos en el horno (previamente precalentado) aproximadamente 15-20 min. a 180ºC. Cuando metas un palillo y este salga limpio. Están listos!! Sácalos del horno y déjalos enfriar en una rejilla.

Mientras vamos haciendo el frosting…

En un bol mezclar el queso en crema con la mantequilla ayudándonos de la batidora (con el accesorio de la cuchilla). Una vez esté bien mezclado y sin trazas, incluimos las cookies que previamente habremos triturado y con una espátula hacemos una mezcla uniforme. Échale azúcar glass al gusto, teniendo en cuenta que la nata montada no tiene azúcar y que es lo último que vas a añadir así que no pasa nada si antes del último paso te parece un frosting demasiado dulce.

Por último y con una espátula, añade la nata montada, con movimientos suaves y envolventes hasta que el frosting esté mezclado completamente uniforme.

Para dar el toque final, tritura unas cookies extra y resérvalas.

Es hora de montar los cupcakes!!

Una vez los muffins están a temperatura ambiente, los colocamos en una bandeja con espacio suficiente entre ellos para poder trabajar bien.

Con la ayuda de una manga pastelera iremos poniendo el frosting de oreo en cada cupcake de manera uniforme haciendo una montañita en cada uno de nuestros muffins. Una vez estén listos, esparcimos por la cima de cada uno las virutas de oreo que teníamos reservadas y le damos el toque final con una mini oreo en uno de sus lados.

Mételos en la nevera para que el frosting coja más consistencia y esté más fresquito y disfrútalos con un gran vaso de leche!!!

MUFFINS DE LIMÓN Y SEMILLAS DE AMAPOLA

Los que me conocéis o leéis mis recetas habitualmente, sabéis que siempre estoy dándole vueltas a algo. O bien algo nuevo o algo mejorado, pues bien, esta vez era algo nuevo para mí pero clásico y a la vez intrigante.

 

 Conocí las muffins de limón y semillas de amapola en Londres, paraíso de los cafés y con gran variedad de muffins (la mayoría deliciosos). Desde entonces no me las he sacado de la cabeza y el otro día por fin me decidí a hacerlas. Como siempre investigando por aquí y por allá… Voilà!!

 

(12 muffins grandes o 24 de tamaño estándar)

 

 

 

 

INGREDIENTES

260gr de harina

2 cucharaditas de levadura

¼ cucharadita de bicarbonato

¼ cucharadita de sal

2 cucharadas de semillas de amapola

135gr de azúcar

1 cucharada de ralladura de limón

2 huevos

180ml de yogur griego (3 yogures)

120ml de aceite de girasol

3 cucharadas de zumo de limón

1 cucharadita de vainilla

 

HERRAMIENTAS

2 bol medianos

Espátula

1 cuchara grande

2 cucharas pequeñas

1 tenedor

Exprimidor

Triturador

Varillas

 

¡Empezamos!

 

Es una receta fácil pero hay que mimarla un poco. Primero con un cuchillo fino cortamos un poco de cáscara de limón evitando coger (en la medida de lo posible) parte blanca, que es la que amarga. Una vez tenemos la cáscara preparada la trituramos junto con un par de cucharadas de azúcar (del que tenemos medido para la receta) hasta obtener un azúcar de limón (amarillo y húmedo), yo lo he hecho con el un, dos, tres de toda la vida…

 

En un bol mediano, mezclamos nuestro azúcar de limón con el resto del azúcar, con ayuda de un tenedor para que se impregne el aroma y la textura en toda la mezcla. Después, añadimos los huevos y los batimos hasta que blanqueen. Añadimos el zumo de limón, el aceite, la esencia de vainilla y el yogur hasta unir bien todos los ingredientes. Reservar.

 

En otro bol tamizar la harina junto con el resto de ingredientes secos, levadura, bicarbonato y sal. Añadir las semillas de amapola y mezclar. Ir incluyendo poco a poco la mezcla seca en el bol de ingredientes húmedos y con ayuda de unas varillas mezclar con no más de 10-15 movimientos (no importa que quede alguna traza, se fundirá con el resto de la masa al hornearse).

 

Rellenar con ayuda de una cuchara los moldes a la mitad o tres cuartos y meter al horno previamente precalentado a 190ºC durante aproximadamente 15 minutos. Estarán listos cuando al introducir una aguja de cocina o cuchillo salga limpio.

 

Estas magdalenas tienen un sabor cítrico riquísimo y un toque crujiente muy agradable. Os las recomiendo!!

LEMON AND POPPY SEED MUFFINS

 

(12 big muffins or 24 standard)

 

If you know me or usually read me you also know that I am always creating something. Something new or something I want to improve. This time it’s a new thing for me but also a classic and intriguing recipe.

 

I try these muffins in London, coffee paradise with lots of muffins (such delicious flavours). Since then I always think about them and now I’ve decided to make my own lemon and poppy seed. Reading some tips and adding some others… Voilà!

 

INGREDIENTS

260gr of flour

2 teaspoons of baking powder

¼ teaspoon of baking soda

¼ teaspoon of salt

2 tablespoons of poppy seeds

135gr of sugar

1 tablespoons of lemon skin

2 eggs

180ml yogurt (3 yogurts) or cream

120ml of oil

3 tablespoons of lemon juice

1 teaspoon of vanilla

 

TOOLS

2 medium bowls

A spatula

1 tablespoon

2 teaspoons

1 fork

Juicer

Blender

Beaters

 

Let’s start!

 

It is an easy recipe but you have to pamper it a little. First of all, cut some lemon peel but avoid to take the white part (is the one that makes mixture bitter). Once you got the peel Reddy, blend it with some sugar (2 tablespoons for example) to get a yellow, citric and wet mixture.

 

In a medium bowl take a fork and mix your citric mixture with all the sugar you’ve got so that you extend the citric to all of it. The add eggs t the sugar and beater then until you get a creamy mixture. Put juice, oil, vanilla and yogurt into the cream and mix them properly until you get a homogeneous mass.

 

Sieve flour with baking powder, baking soda and salt in another bowl and then put the poppy seed on it. Mix it properly. Add this mixture in the wet one and blend them with a beater in a few moves (10-15 moves). Doesn’t matter if there are some traces of flour, it will melt into de mass in the oven.

 

Fill the mold with a spoon to the half or a bit more and put then in the oven preheated up to 190ºC. Cook them for about 15 minutes. When you prick them with a knife and it gets out clean, they are ready!!

 

They are citric and crunchy. Delicious!!

BIZCOCHO DE CALABAZA

Llevaba tiempo dándole vueltas a diferentes recetas de bizcochos. Bizcochos clásicos. Los que elegimos a la hora del desayuno o de merienda con una taza de leche, café, colacao, te… En casa siempre hemos hecho el bizcocho de aceite y limón de 1080 recetas de Simone Ortega y el bizcocho de yogur de toda la vida. Y por supuesto el mítico bizcocho de chocolate que es éxito asegurado en cualquier ocasión. Pero yo buscaba algo distinto… algo puede que no tan ibérico... y entonces encontré esta receta en Atrapada en mi cocina.

La idea era hacer el bizcocho de siempre desde otro punto de vista y esto lo cumple con creces. Como bien dice la receta original el sabor de la calabaza no se nota, en cambio deja una consistencia y textura perfectas, y además le da un toque dulce muy interesante al bizcocho.



Empezamos!

INGREDIENTES
250 gr. de calabaza pelada y troceada
250 gr. de azúcar
250 gr. de harina
70 gr. de aceite de oliva
3 huevos
1 sobre de levadura química tipo Royal (16gr)
Azúcar glass para decorar
Almendras laminadas para decorar

HERRAMIENTAS
2 boles
Varillas
Espátula
Tenedor
Plato hondo

Lo primero que vamos a hacer es asar la calabaza, para ello metemos los trozos de calabaza en un bol y los cubrimos con agua y lo tapamos con un film. Los cocemos en el microondas a potencia máxima durante aproximadamente 10 minutos (yo los he pinchado después de 5 minutos para vigilar como iba la cocción). Una vez hemos comprobado que la calabaza está cocida, la ponemos sobre un plato hondo, aplastamos los trozos con un tenedor y la hacemos puré. Dejar a un lado hasta que esté a temperatura ambiente.

En otro bol ponemos los huevos con el azúcar y dejamos blanquear la mezcla hasta obtener una crema homogénea. Cuando la calabaza esté tibia, la echamos a la mezcla de los huevos y añadimos el aceite y mezclamos bien.

Mezclamos previamente la harina con la levadura y la vamos añadiendo, tamidaza a la mezcla del bol y mezclamos la masa con una varilla hasta que ésta sea completamente homogénea.

Engrasamos dos moldes con un poco de aceite y vertemos nuestra masa repartiéndola equitativamente en ambos. Después echamos las almendras laminadas sobre por el centro de cada uno de los bizcochos y los metemos en el horno previamente precalentado a 180º durante aproximadamente 20 minutos (depende del horno y la temperatura pero cuidado no se os pase que se quema muy rápido).
Pinchamos los bizcochos con una aguja de cocina o un cuchillo y si sale limpio esta listo!! Déjalo enfriar un poco antes de desmoldarlo y échale azúcar glass por encima para darle el toque final.

La casa entera huele a pastelería y los bizcochos nos hacen ojitos, pero están mucho más ricos cuando han reposado y están a temperatura ambiente.

PUMPKIN CAKE

I was thinking about this cake a few weeks. We always make the same cakes at home, yogurt, lemon-oil and chocolate of course. We love them; they are the perfect choice for breakfast, teatime or even as desert, but I was looking for something… else.

The fact was to make a classic but new cake using different recipes so I choose this one. As you can read in the recipe pumpkin gives the cake an amazing texture but it hardly taste.

INGREDIENTS

250 gr. of pumpkin puree
250 gr. of sugar
250 gr. of flour
70 gr. of olive oil
3 eggs
16 gr. of baking soda
Icing sugar for decorating
Sliced almonds



TOOLS

2 bowls
Beaters
Spatula
Fork
Plate


The first step is to cook the pumpkin. Put it in pieces into a bowl and cover them with water. Cover the bowl with some Clingfilm and cook it in the microwave for 10 minutes at maximum power (prick it one or two times to see how it is cooking) When it’s cooked smash the pieces with a fork on a plate and make puree. Reserve it until it gets cold.

Mix the eggs with sugar in a bowl until you get a homogeneous cream. When pumpkin gets cold add it to the cream and put the oil too. Mix it properly.

Add the flour with the baking soda (mixed before) to the mixture shifting them little by little until you get a homogeneous mass.

Grease the baking pans with oil and flour and put the mixture into the pans in the same proportion. Add some sliced almonds and put them into the oven preheated 180ºC during 20 minutes (depends on the oven and the temperature you use. Be careful, it is a fast cooking sponge).

Prick the cakes with a cooking needle or a knife and if it comes out clean sponges are ready!! When they are cold take them out of the baking pan, put some icing sugar for decorating and serve it with some milk… mmmm.

The whole house smells like heaven and cakes are ready. Tomorrow a tasty and new breakfast menu!

GALLETAS DE MANTEQUILLA

Estas galletas han estado presentes en casa cada Navidad desde siempre, o al menos desde que yo puedo recordar… son muy fáciles y están riquísimas!

Además, son ideales para desayunos y meriendas en familia o con amigos y son un buen detalle para cuando visitas a alguien en casa. Puedes adaptar la temática a eventos y estaciones con los cortadores adecuados, y son la base perfecta si te aventuras en el mundo de las galletas decoradas!


¡Comenzamos!


INGREDIENTES
500 gr de harina
200 gr de azúcar
350 gr de mantequilla
2 yemas de huevo
1 huevo entero
1 cucharada de vainilla

HERRAMIENTAS
2 bol grandes
1 estribo de cocina
Varillas
1 rodillo
1 cuchillo
Papel manteca
Papel film
Cortadores de galletas

Para la masa, echamos la mantequilla, huevos y vainilla en un bol y mezclamos bien con la ayuda de unas varillas. En el otro bol mezclamos harina y azúcar que iremos incorporando a la masa anterior poco a poco con ayuda de un estribo.

Hay que ir mezclando pacientemente todos los ingredientes hasta obtener una mezcla homogénea y hasta que la masa tenga la consistencia suficiente como para terminar de unirlos a mano. Una vez conseguimos hacer una bola de masa, la envolvemos en film y la dejamos reposar en la nevera durante 24 horas.
Cuando la masa esté reposada, la sacamos de la nevera. Espolvoreamos harina sobre una superficie plana donde vayamos a hacer las galletas, cortamos con ayuda del cuchillo un trozo y lo extendemos con el rodillo.

Utilizamos los cortadores para dar forma a nuestras galletas y las dejamos en la bandeja del horno (a la que previamente habremos puesto una plancha de papel manteca) dejando aproximadamente uno o dos dedos  de separación entre ellas. Continuaremos con el proceso hasta llenar la bandeja entera.

Con el horno previamente precalentado a 180ºC horneamos las galletas hasta que estén doraditas (10-15 minutos aproximadamente), cuidado que se queman en seguida! Hay que estar muy atentos!!

Pasado este tiempo, sacamos las galletas del horno y las dejamos enfriar, fuera de la bandeja, sobre una superficie plana. Repetiremos los últimos pasos hasta que nos quedemos sin masa.
Para servirlas en casa puedes animarte a decorarlas con azúcar glass, bañarlas en chocolate, decorarlas con icing de colores o dejarlas al natural. Bueniiisimas!!

BUTTER COOKIES

These cookies have been at home every Christmas since I can remember… they are easy to make and very tasty too!

They are the perfect choice for breakfast or afternoon tea and you can enjoy them with family, visits or friends. You can make them according to the season or the situation with the appropriate cutters.

Let’s begin!

INGREDIENTS
·   500 gr of flour
·   200 gr of sugar
·   350 gr of butter
·   2 yolks
·   1 egg
·   Vanilla essence

TOOLS
·   2 big bowls
·   1 stirrup
·   Beaters
·   1 roller pin
·   1 knife
·   Baking paper
·   Clingfilm
·   Cookie cutters

For the mass put the butter, eggs and vanilla into a bowl and mix them properly with some beaters. In the other bowl put flour and sugar together, now we are going to add bit by bit the flour+sugar into the other bowl mixing it with a stirrup.

Mix all the ingredients until you get a homogeneous mass and it has the right consistency to take it with your hands for making a ball with the whole mixture. Then cover it with Clingfilm and put it on the fridge for 24 hours so that it can rest.

When the mass had rested, take it out of the fridge. Sprinkle some flour into a plain surface, cut some mass and extend it with a roller pin. Use the cutters to define your cookies and put them into the baking tray (we have put the baking paper before) leaving 1 or 2 fingers between them. Continue with this process until you fill the tray.

Cook your cookies until they get goldy (for about 10 to 15 minutes) with the oven preheated up to 180ºC. Be careful not to burn your cookies!! They cook very quickly!

When they are cooked, take them out of the oven and let them get cold without the tray. Repeat the final steps until there is no more mass.

For serving them you can add some icing sugar, chocolate or leave them natural. Delicious!!

BIZCOCHO DE BUTTERMILK Y MANZANA


Cuando hice el proyecto de San Valentín para la Batalla de los Dulces, uno de los ingredientes de mi Red Velvet era buttermilk. Había oído hablar de él pero nunca lo había utilizado. Me gustó mucho la textura que da a los bizcochos y como el bote que compré tenia una cantidad bastante generosa de producto, aún me quedaba la mitad por utilizar y no sabía exactamente para qué podía usarlo.

Leyendo un poco por la red, encontré esta receta del blog Ma petit boulangerie que me pareció muy tentadora y decidí hacerla sin duda.

INGREDIENTES
·  3 huevos
·  130ml buttermilk
·  75g de aceite
·  220g de harina
·  2 cucharaditas de levadura
·  1 cucharadita de canela
·  150g de azúcar
·  3 manzanas (del tipo que más os guste)
(Yo hice el doble de masa para amortizar el buttermilk que quedaba en casa)

HERRAMIENTAS
·  Dos boles medianos
·  Unas varillas
·  Una espátula
·  Una cuchara grande
·  2 cucharas pequeñas

Los pasos a seguir son sencillos. Como hemos hecho otras veces mezclamos los ingredientes secos en un bol (harina, azúcar, canela y levadura) y los húmedos en otro (aceite, buttermilk y los huevos, incorporándolos bien de uno en uno). Vamos a mezclar el contenido de ambos recipientes hasta obtener una mezcla homogénea. Por último incluimos las manzanas, peladas y cortadas en cuadraditos (no muy grandes) a la mezcla.

Engrasamos un molde con un poco de mantequilla y harina, y lo metemos en el horno previamente precalentado a 180º. Vamos a hornear el bizcocho durante aproximadamente 45 minutos. (Yo he puesto la masa en dos moldes rectangulares de aluminio por lo que al contener menos masa cada uno, los bizcochos se han cocido en menos tiempo. Hay que tener siempre en cuenta la temperatura, horno y molde que se utilicen para calcular el tiempo necesario).

Cuando el bizcocho ha subido, lo pinchamos con una aguja de cocina o un cuchillo y si salen limpios nuestro cake está hecho!!

BUTTERMILK & APPLE CAKE

When I made Saint Valentine’s project for the Sweetest Battle I discovered an ingredient I didn’t know about, buttermilk. I liked very much the texture that gets the sponge. The bottle is 500g so that I use only half of it to the Red Velvet cake and I had to think for what I can use the other half.

I read some recipes on the Internet and I found one I liked very much on Ma petit boulangerie’s blog so I decided to make it.

INGREDIENTS
(I made double amount of mass to consume all the buttermilk left).
·  3 eggs
·  130ml of buttermilk
·  75g of oil
·  220g of flour
·  2 teaspoons of baking powder
·  1 teaspoon of cinnamon
·  150g of sugar
·  3 apples (the kind you like the most)

TOOLS
·  Two medium bowls
·  A beaters
·  A spatula
·  A big spoon
·  2 teaspoons

The steps are easy. As we have made other times we have to mix the dry ingredients in a medium bowl (flour, sugar, cinnamon and baking powder) and the buttermilk, oil and eggs (adding them one by one and making a homogeneous mixture) in the other one. Then we are going to mix the content of both bowls properly and add the apples without skin and cut into little pieces to the mass.

Grease the baking pan with some butter and flour and put the mass in it. Put it into the oven preheated up to 180º. We are going to bake the cake for about 45 minutes. (I put the mass into two baking pans so I bake them for a few minutes less. Time depends on the oven; temperature and baking pans you are using it).
When the sponge has grown, prick it with a knife and if it gets out clean your cake is ready!!
