BATALLA DE SEPTIEMBRE: DIBUJOS

BROWNIE DE BETTY BOOP

Después de mucho pensar, mucho dudar y mucho pensar otra vez. ¡Lo conseguí! Aquí está mi pequeña ‘obra de arte’. El primer asalto y por tanto estreno de ‘La batalla de los dulces’.

Por si no leísteis el post en el que explicaba la batalla, vamos a recordarlo de nuevo. La batalla de los dulces’ es un reto mensual entre Sonia de Sin sapos ni princesas y yo. Las normas son sencillas pero con resultados infinitos. Cada mes se plantea un tema, y con él, cada una sin decirle nada a su contrincante, idea y lleva a cabo un postre o dulce cumpliendo con dicha temática.

Este mes, Septiembre, y de estreno, comenzábamos con dibujos animados. Dejando a un lado la temática Disney, personajes de películas o cómics. Y este ha sido el resultado, ¿queréis verlo?
INGREDIENTES

Para el Brownie
- 3 huevos
- El mismo peso (de los huevos) de harina
- El mismo peso (de los huevos) de azúcar
- El mismo peso (de los huevos) de chocolate
- El mismo peso (de los huevos) de mantequilla
- 2 cucharaditas de levadura

Para la cobertura
- 80gr. de chocolate para cobertura
- 15gr. (aprox.) de mantequilla
- Un chorrito de leche

Para el fondant
- Nubes blancas
- Azúcar glass
- Aroma de azahar
- Colorantes alimenticios

Empezamos con el reto (toda una aventura…)

Lo primero es la base del postre, para eso yo elegí lo que en principio parecía un sencillo bizcocho de chocolate. Pues bien, para hacer mejor el dibujo elegí un molde rectangular, grande y plano de silicona, por lo que el resultado fue algo distinto al que esperaba.

Siguiendo una deliciosa receta de bizcocho de chocolate de Simone Ortega en sus 1080 recetas, comencé a mezclar los ingredientes. Pesas los huevos y según lo que pesen calculas el peso de los demás componentes de esta delicia repostera.




Fundes la mantequilla con el chocolate, yo utilice para esta ocasión perlas de repostería Valor de chocolate negro 70%, aunque podéis utilizar el que más os guste. Si utilizáis chocolate en polvo, el chocolate sabe menos, pero estará también muy rico. Para fundir homogéneamente estos ingredientes puedes hacerlo en el microondas (como ha sido mi caso) o al fuego. Hagas lo que hagas, que no hierva ni se cueza!!

Cuando esté listo el chocolate, incluimos el azúcar y lo removemos bien hasta obtener una mezcla homogénea. Ahora vamos a incluir los huevos, pero por partes. Separamos las yemas de las claras y reservamos las claras en un recipiente a parte. Echamos las yemas una a una en la mezcla que teníamos.
Cuando esté listo el chocolate, incluimos el azúcar y lo removemos bien hasta obtener una mezcla homogénea. Ahora vamos a incluir los huevos, pero por partes. Separamos las yemas de las claras y reservamos las claras en un recipiente a parte. Echamos las yemas una a una en la mezcla que teníamos.


Por otro lado, montamos las claras que habíamos reservado a punto de nieve y las incluimos a la masa que casi está terminada. Las claras a punto de nieve son muy delicadas, por lo que esta vez si que si, controlad los movimientos que deben ser suaves y dejando entrar algo de aire mientras mezcláis bien todos los ingredientes.

La masa del bizcocho está lista. Ahora, engrasamos el molde en que vamos a hornearlo con un poco de mantequilla y algo de cacao (uso cacao para que no me quede blanco el bizcocho con la harina, pero podéis usar harina como siempre sin problemas). Vertemos la masa en el molde, fijándonos que la masa esté proporcionalmente distribuida por todo el molde y lo metemos al horno que previamente hemos precalentado a 180º. El bizcocho estará listo en aproximadamente 50 minutos (si lo cueces demasiado te quedará como una galleta. Si eliges un molde como el mío, 50 son demasiados minutos. Ojo que se os seca!)

En mi caso, al elegir un molde bajo y ancho de silicona, la cocción debe ser menor y no subió casi nada, así que podemos decir que esta receta para este molde da como resultado un rico y negro Brownie.

Antes de cubrirlo de chocolate fundido y ante la sorpresa de obtener un Brownie y no mi esperado bizcocho, decidí emborracharlo un poco para empaparlo y que estuviera más jugoso. En una cacerola puse un poco de agua con dos cucharadas de azúcar y formé un almíbar sencillo. Después le añadí al almíbar un par de cucharadas de licor y dejé que se fundiera bien al fuego.

Distribuí generosamente el líquido por todo el bizcocho y prepare los ingredientes para la cobertura. Se trocea el chocolate, se le incluye la mantequilla, se echa un poco de leche y al microondas. Cuidado que no hierva que se consume y se queda en nada el rico chocolate y es una pena. La leche se incluye cuando se ve que hace falta, que no quede ni muy liquido ni muy espeso, simplemente lo suficientemente elástico para cubrir nuestro postre.

Con el chocolate en caliente y una espátula, extendemos cuidadosamente el chocolate por el bizcocho. Una vez lo hemos cubierto en su totalidad, lo metemos en la nevera y lo dejamos enfriar.

Mientras se enfría, vamos a trabajar el fondant de nubes. El fondant de nubes debe hacerse al menos 24 horas antes para que la ‘pasta’ de nubes esté reposada y se pueda trabajar mejor.

En este caso yo he utilizado fondant de dos colores para hacer a Betty Boop: blanco y rosa. Para hacer el fondant blanco necesitamos 100 gramos de nubes blancas, 200 gramos de azúcar glass y una cucharada de aroma.

Siempre se utiliza el doble de azúcar que de nubes, así que el cálculo depende de la cantidad de masa que vayas a utilizar. El aroma se puede elegir al gusto, al principio pensé en vainilla, pero como la masa era blanca y la vainilla marrón… no me he atrevido (cobarde).
Se engrasa un bol con mantequilla y se ponen dentro las nubes troceadas con una cucharada generosa de aroma para humedecer un poco el contenido del cuenco. Se mete en el microondas (a ojo, depende de la potencia, sólo unos segundos, que esto se derrite en seguida y no debe quedar liquido, solo pegajoso). Con una cuchara se mezcla el contenido del bol hasta obtener una pasta pegajosa. Se le echa a esta pasta la mitad del azúcar glass necesario y se empieza a mezclar con las nubes. Es una pasta muy densa y no muy fácil de manejar, pero paciencia, que sale (Poner un poco de azúcar en la mesa primero o se os pegará a la mesa para siempre!).


Cuando la mezcla es algo más independiente, se saca del bol y se mezcla en la mesa con el resto de azúcar (antes de sacar la masa del bol, engrasa tus manos con un poco de mantequilla). Se va amasando poco apoco hasta formar una bola uniforme de color blanco (hasta que ya no se te pegue a las manos. Esto tarda en pasar…


Cuando tengas el fondant listo y en una bola, lo engrasas con mantequilla lo pones en un film y lo envuelves sin que quede aire en el interior del paquete. Luego debe reposar 24 horas.
Para hacer el fondant rosa, se siguen los mismos pasos, sólo debes incluir el colorante después de calentar las nubes y antes de mezclarlo con el azúcar. Una vez calientes las nubes y las vayas a mezclar. Se usa colorante rojo, que con el blanco de la masa queda rosa. Cuando más rojo eches, más rosa queda. Otro día haremos fondant rojo que es otra historia…

Bizcocho frío, fondant reposado. A decorar!!



Calentamos unos segundos (muy pocos) el fondant en el microondas (sin plástico) para extenderlo después sobre la mesa con un rodillo. Con el dibujo que queremos hacer en un papel (el dibujo entero y también por partes), vamos recortando el fondant acorde al diseño que queremos obtener y vamos uniendo los trozos como haciendo un puzzle con los distintos colores.


En el caso de Betty Boop, el fondant blanco y el rosa forman el dibujo. A trozos según la parte que corresponda. La he montado aparte en una bandeja y la he ido poniendo en el bizcocho a trozos. Primero el fondo, luego el cuerpo y la cabeza lo ultimo (el momento más tenso).
Los últimos retoques los he hecho con chocolate fundido (el mismo que la cobertura) y con glasé amarillo y rojo (de esos que se compran en tubos).


Primero el pelo, con el chocolate fundido y ayudándome de una cucharita, un tenedor pequeño y varios palillos. Una vez el pelo está cubierto del todo. He metido la cabeza (de Betty) en el congelador unos minutos para que el chocolate se quedase duro. Los ojos, cejas y detalles de la cara también los he dibujado con un palillo.


Las pulseras y pendientes los he pintado con glasé amarillo y la boca con glasé rojo. Las letras las he hecho también con fondant rosa.





Y esto ha sido mi mes de septiembre, un reto personal que me ha traído muchos quebraderos de cabeza pero que ha valido mucho la pena. ¿Qué os parece? ¿Os animaríais a hacerlo?

BETTY BOOP’S BROWNIE

After thinking a lot, lots of doubts and think about it one more time. I did it! Here is my little ‘masterpiece’. First round of ‘The sweetest battle’ starts now.

If you have skipped the intro of The Battle, let’s remember… ‘The sweetest battle ’is a monthly challenge with Sonia, Sin sapos ni princesas blogger. Simply rules, lots of solutions. Every month we choose a topic and both of us secretly think and make some thematic sweets for the contest.

This month of September, for the contest premiere we chose Cartoons. But no Disney cartoons, movies or comic characters. Do you want to see the result?
INGREDIENTS

For the Brownie
- 3 eggs
- Its weight of flour (eggs weight)
- Its weight of sugar (eggs weight)
- Its weight of chocolate (eggs weight)
- Its weight of butter (eggs weight)
- 2 teaspoons of baking powder

For the coverage
- 80 gr. of chocolate fondant
- 15 gr. of butter
- Milk

For the fondant
- White marshmallows
- Icing sugar
- Scent
- Food colouring

So, here we go! Let’s start with the adventure…

First of all we have to do the cake itself. I pick a simple chocolate sponge. To make the character better, I choose a plain and rectangular silicone baking pan so the result was different than I expected.

Following Simone Ortega’s chocolate sponge of her 1080 recipes, I start mixing the ingredients. Weight the eggs to know the weight of the flour, sugar, butter and chocolate that you will need.

Melt butter with chocolate, I use Valor 70% dark chocolate chips this time, but you can use whatever you want to. Be sure the chocolate doesn’t cook itself! Only melt it.

When it’s ready, we add the sugar and stir it till we get a homogeneous mass. Then we put the eggs, only the yolks, one by one and mix them properly. On the other hand we have to beat the whites till stiff and reserve them for the moment.
Put the baking powder into the flour and then add it (little by little) to the mixture sieving it. Remember that if you manipulate too much the mixture, your cake will not rise, so you should do it in a few moves. Add now the whites in the fewer moves you can and the mass will be done.

Get ready the baking pan greasing it with some butter and cocoa, so that your sponge will not stick to the pan (I use cocoa because with flour you maybe get a whiter cake, but you can also use it). We put the mass in to the baking pan. Spread the mixture equally. We cook it in the oven pre-heated up to 180º for about 50 minutes (If you cook it too much it will be a huge cookie! (It gets dry).


If you choose a baking pan like the one I used cook it less than the 50 min of the recipe. Because of the choice I made, we can say my cake is a tasty brownie dark and low.

Before add the melted chocolate I ‘drunk’ the cake a little with some sweet syrup and liquor. You have to put on a pan a little of water and two soup spoons of sugar, melt it properly and add the liquor. Then spread the syrup in the whole cake.

To cover the brownie melt the chocolate with the butter and a little of milk. Do not boil the chocolate because it will disappear and it is a pity. Put some milk to make the mixture more elastic so that you can work better with it.

Spread the chocolate while it is still hot with a spatula and cover all the cake. Put the cake in to the fridge until it gets cold.

Now we have to work with the marshmallow fondant. The fondant has to rest about 24 hours so that you can work properly with it.

I use white and pink fondant for my Betty Boop Brownie. To do the white fondant we need 100 gr. of white marshmallows, 200 gr. of icing sugar and a spoon of scent.


Grease the bowl with butter and then put the marshmallows in pieces into it and put them in it. Then add a spoon of scent and put the bowl into the microwave for a few seconds (careful, the time depends on the microwave, just a few seconds because they melt very fast. It doesn’t have to be liquid, only sticky). With a spoon, stir the content until it gets homogenously sticky, and then add half of the sugar you will need and mix it too. When it’s denser add the rest of sugar and mix in on the table (put some sugar or it will stick like forever on the table! Put also some butter in your hands before pick the mixture of the bowl). It is a complicated mass but be patient, you will get it!

When you get the mass ready make a circle, grease it with butter and wrap it in Clingfilm with no air on it. Then leave it 24h resting.
Fondant use always more sugar than marshmallows, so you have to calculate the weight of your ingredients depending on what you need for doing your cake. You can use the scent you want, I thought about vanilla but is a brown scent so I didn’t know if my fondant would be brown to (coward me). 

For making pink fondant you have to do the same thing you did with the white one, you only have to include the food colouring after melting the marshmallows. You need red colouring. With the white mass it gets pink, if you add more colouring, it gets pinker. Another day I will explain about the red mixtures…

Cake is Reddy, fondant has rested, let’s have fun!!


Heat the mass in the microwave, only a little (and without plastic! If you heat it too much you will not be able to use it till it gets colder).Spread it in a table with a roller pin and cut the mass according to the picture using some paper as template. Then we have to join the pieces like in a jigsaw puzzle.

To make Betty Boop I use white and pink fondant for the picture. I made her in a tray, and when it was finished I put it in the brownie, first the back, then the body and finally the head (very difficult moment).

Last details are made of chocolate (same that covers the brownie) and with yellow and red glaze (bought it on supermarket).


I paint the hair with a little spoon, a little fork and some toothpicks. When I finished Betty’s hair I put it on the freezer for a while. Eyes, eyebrows and some details are also painted with a toothpick.


Earrings and bracelets are of yellow glaze and I used red glaze for the mouth. Finally I made pink fondant for Betty’s name.

And this was my September, a personal challenge with lots of strategy and thinking. What do you think? Would you make a cake like this?

  1. ¡Vaya currele! El resultado bien ha merecido un mes de dudas, jejeje. Me ha encantado esta primera parte de La Batalla de los Dulces. Tanto que estoy deseando que llegue Hallooween :). ¡Nos queda tanto por aprender!
