BATALLA DE NOVIEMBRE: MÚSICA

  ALARMANTIKS ‘FENDER’ CAKE

22 de Noviembre, día internacional del músico, y como no podía ser de otra manera, este va a ser un reto dedicado a Alarmantiks.
INGREDIENTES

Para la base (bizcocho de yogur)
·  6 huevos
·  2 yogures
·  4 vasos de yogur de azúcar
·  6 vasos de yogur de harina
·  2 cucharadas de levadura
·  1 vaso de yogur de aceite
·  Mantequilla y harina para engrasar los moldes

He hecho la masa dos veces para hacer dos bizcochos grandes, rectangulares y bajos (como podéis ver en la foto).


Para la cobertura
·  2 tabletas de chocolate negro de cobertura

Para la decoración
·  Fondant de nubes
-   Nubes blancas
-   Esencia de vainilla
-   Azúcar glass
-   Colorante alimenticio
-   Una pizca de mantequilla
·  Chocolate negro de cobertura

Herramientas que necesitamos:

Para la base:
·  Un bol grande
·  Una varilla
·  Una espátula

Para la cobertura:
·  Una espátula
·  Una cuchara

Para la decoración:
·  Un rodillo
·  Un cuchillo
·  Unas tijeras
·  Jeringuilla de decorar
·  Una cuchara

Una vez tenemos preparados los ingredientes y materiales que necesitamos, empezamos!!
La base que he hecho esta vez es muy sencilla, es la de bizcocho de yogur de la receta de bizcocho mármol que colgaba hace varias semanas.
Es muy fácil de hacer, sólo hay que mezclar todos los ingredientes en un bol y mezclarlos hasta que quede una masa homogénea. Yo lo hago a mano con varillas, queda más denso y esponjoso. La levadura lo último en pocos movimientos para que suba lo que debe.

Con el horno precalentado a 180º (como os digo en todas las recetas de horno, el tiempo es aproximado dependiendo de las características del horno y la temperatura que pongáis) se hornea durante aproximadamente 50 minutos. Vigiladlo cada poco para que no se os queme o quede seco.

Una vez hechos, los sacamos del horno y los dejamos enfriar.

El fondant, que hice por primera vez en el reto de Septiembre para Betty Boop, es el mismo en esta ocasión, debe hacerse al menos 24 horas antes, ya que es el tiempo que debe reposar dentro o fuera de la nevera.

Es fácil de hacer, aunque un poco pringoso y hay que tener paciencia. En un bol, engrasado con un poco de mantequilla, ponemos las nubes en trozos junto con una cucharada de esencia. Lo metemos al microondas unos segundos para fundirlos, pero sin que queden líquidos. Si es fondant de color, es el momento de echarle el colorante alimenticio, se remueve bien y se le añade la mitad del azúcar necesario. Recordad que el fondant como norma general necesita el doble de azúcar glass que de nubes.

Nos engrasamos un poco las manos, sacamos la masa del bol y le vamos añadiendo el azúcar restante. Aunque la lucha con esta pasta pegajosa parece eterna, no os preocupéis, con paciencia ganareis la batalla seguro. Una vez está lista la masa fondant, se hace una bola, se engrasa con mantequilla y se envuelve en film transparente de forma compacta y sin aire. Dejar reposar la masa 24 horas.
Para el resto de colores o masas se sigue el mismo procedimiento. En mi caso el procedimiento ha sido el siguiente:

Para el fondant blanco, en lugar de esencia he echado una cucharada de agua para humedecer las nubes y he hecho la masa según el procedimiento normal.

El fondant beige lo he sacado echando esencia de vainilla, es el color natural que queda cuando le echas esta esencia marrón.

Para el fondant color fresa, primero he hecho fondant beige, con esencia de vainilla y luego he ido añadiendo el rojo hasta obtener ese color.




Una vez los bizcochos están fríos, los desmoldamos y con un cuchillo y mucho cuidado recortamos la forma de la guitarra. Primero el cuerpo de la guitarra, quitamos los bordes y del otro bizcocho sacamos el mástil y el clavijero. Para las notas musicales de la derecha hemos utilizado un trozo de bizcocho que sobraba del dibujo.



Para cubrirlo, derretimos al fuego o al microondas el chocolate con un poco de leche, no demasiada para que quede espeso y luego lo extendemos por la superficie y paredes de la guitarra.







Para añadir colores y dibujos sacamos el fondant de la nevera, si está muy duro, metemos la masa en el microondas un par de segundos. Con ayuda del rodillo extendemos la masa color fresa en este caso lo más ajustado posible al cuerpo de la guitarra. Una vez está listo lo ponemos con cuidado encima del bizcocho. Recortamos los bordes que nos sobran con unas tijeras o un cuchillo y tapamos con los restos los posibles huecos que queden. Para alisarlo podemos ayudarnos de una cuchara pequeña.

El detalle blanco lo hacemos de la misma manera: microondas, rodillo, lo ponemos encima del bizcocho ya decorado de fondant rosa, recortamos la forma con unas tijeras y con los restos moldeamos y colocamos los detalles. El clavijero, en beige, se hace igual.

Las cuerdas son de fondant blanco, lo único que hay que hacer es un fino espagueti con cuidado (que se rompe todo el rato!) y colocarlo casi sin respirar para que no se llene de chocolate.




Por último, las clavijas las he pintado con la jeringuilla de decorar, así como el logo de Alarmantiks.

Y las notas, se cubren de chocolate a la vez que el bizcocho.

ALARMANTIKS ‘FENDER’ CAKE

November 22nd, International day of music, so our challenge this time is no other than MUSIC. My 3rd round is here: The Alarmantiks Fender cake.

INGREDIENTS

For the base (Yogurt sponge)
·   6 eggs
·   2 yogurts
·   4 yogurt cups of sugar
·   6 yogurt cups of flour
·   2 teaspoons of baking powder
·   1 yogurt cup of oil
·   Butter and flour to grease the baking pans

I made the mass twice to make two big rectangular and low sponges (like you can see in the photograph).

For the coverage
·   2 fondant dark chocolate bars

For decorating
·   Fondant
-    White marshmallows
-    Vanilla scent
-    Icing sugar
-    Food colouring
-    A prick of butter
·   Dark chocolate for coverage

You will need:

For the base:
·   A big bowl
·   A beater
·   A spatula

For the coverage:
·   A spatula
·   A spoon

For decorating:
·   A rolling pin
·   A knife
·   Scissor
·   Decorating syringe
·   A spoon



We get ingredients and tools ready, so let’s start!
The base is the classic yogurt cake. The marble cake recipe I posted some weeks ago.

It’s easy to made, you only have to mix all the ingredients and make a homogenous mass. I use beaters and a bowl, it gets spongier and denser. Put the baking powder the last one and mix it in the fewer moves you can so that the sponge will grow up enough.

We cooked the sponges for about 50 minutes with the oven preheated up to 180ºC (time is an approximation; it depends on the oven features and the temperature you use). Watch them carefully, do not burn them or let them get too dry.

While they are done, we take them out of the oven and let them get cold.

I made the fondant for September challenge (Betty Boop) the first time. As I explained then you have to make the fondant at least 24 hours before using it because that’s the time it has to rest (in or out of the fridge).

It is easy to make but extremely sticky so you have to be patient.

In a bowl greased with some butter, we add marshmallows into pieces and a spoon of scent. Put the bowl into the microwave for a few seconds to melt the mix (not liquid, only sticky). Stir the mass. If you want the fondant to has colour, add the food colouring now and stir it till the mass has a uniform colour. Add half of the sugar you need to make the fondant and mix it to the sticky mass. Put some sugar on the table, grease your hands with some butter get the mass out of the bowl and add the rest of sugar. You have to manipulate the mixture a lot to get the fondant done, but you will get it, I promise. Remember that to make the fondant we will need twice sugar than marshmallows. When the mass is a homogeneous independent mixture, make a ball, grease it with some butter and put a Clingfilm on it (with no air). Then, let the fondant rest for 24 hours.

To make other colours follow the same instructions. In this case I did it this way:

To make white fondant I use a spoon of water instead of a scent to get a whiter mass, but the process is the same I have just told you.

To make beige fondant I use a spoon of vanilla scent but no food colouring. It is the natural colour of the scent.

To make dark pink fondant, I made first a beige fondant with vanilla scent and then I add red colouring till I obtain this colour.

When cakes are cold, we take the sponges out of the baking pan. With a knife and lots of care we draw and cut the sponge and make a guitar cake. First we cut the body and with the other sponge the mast and details.

For the coverage we melt some dark chocolate with a bit of milk, not too much, so that it is a dense chocolate appropriate to extend it on the surface and walls.

To add colours and details we take the fondant out of the fridge, heat it just a few seconds in the microwave to manipulate it better. Extend the pink mass with a roller pin trying to adjust it to the size of the cake. Cut out the excesses with a knife or some scissors and if there is some surface with no fondant use the little pieces to cover it. You can smooth it with a spoon.

The white detail is made the same way: microwave, roller pin, put it on the cake and cut the excess to draw it properly. To decorate the top of the mast with beige fondant you have to do the same thing.

The strings are made of White fondant; I made white spaghetti with my hands. Be careful it’s so breakable! And do not breathe when you put it on the mast or it will get dirt with the chocolate!

Finally, I draw the pins with chocolate using a decorating syringe, like the Alarmantiks logo.

The music notes are covered by dark chocolate.
